Introducing our air-flown series, Turbo Sazae.
Sazae are turban sea snails found in the waters near Japan & Korea, with ornately beautiful shells distinguished by jagged horns. They pack a strong, fresh smell of the ocean, often enjoyed either raw or grilled over charcoal. When eaten raw, they present a satisfying crunch that gives way to a chewy texture, best served by slicing very thinly and serving cold.
To make it, they clean out the shell, put the flesh back in, and fill it with Japanese sake. It’ll cooked over a robata grill until fully cooked, and then the flesh is cut into small pieces. Most of the meat is chewy and similar in texture and taste to eating an abalone or a cherrystone clam.
